In 2007 Graeme Pallister set out to create a restaurant following his guiding principles of LOCAL - HONEST - SIMPLE
The result is 63 Tay Street restaurant, situated in the heart of historic Perth adjacent to the River Tay which passes through the town.
The restaurant by day is light and airy with a contemporary feel to the space. In the evenings for dinner the atmosphere is relaxed and sophisticated.
